Favorite Foods Friday

It's the return of Favorite Foods Friday! I don't know how often I will post a recipe, I have already shared quite of a few out of my regular rotation. But I am trying a few new ones and we have found a few that are keepers.

This is a recipe for yeast waffles that I found through allrecipes.com. We all really enjoyed it and I like the "make ahead" quality of it.

Yeast Waffles by Janet Morris
2 cups milk
1 (.25 ounce) package of active dry yeast
1/2 cup warm water (110 degrees)
1/2 cup butter, melted
1 tsp vanilla
1 tsp salt
1 tsp white sugar
3 cups sifted all purpose flour
2 eggs, slightly beaten
1/2 tsp baking soda

Warm the milk in a small sauce pan until it reaches 120 degrees, then remove from heat. In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.

In a large bowl, combine milk, yeast mixture, butter, salt, sugar, and flour. Mix thoroughly with an electric stand or hand mixer, until batter is smooth. Cover and let stand at room temperature at least 2 hours to overnight.

The next morning or a couple hours later, stir in beaten eggs and baking soda into the batter, beat well.

Spray a preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown.


You can definitely tell these are yeast waffles, but we all really enjoyed them. They were crispy on the outside and so tender on the inside. Matt said they were the best waffles he's ever had. I made a double batch and we got 30 waffles...needless to say some went to the freezer for a quick breakfast or dinner another time. Oh, and if you do decide to double it put it in a BIG bowl, it rose right out of my kitchen aid mixer bowl...oops!
