Another very healthy recipe coming your way ;) This one is definitely a family favorite...cinnamon rolls! One of my favorite memories about cinnamon rolls is eating them with Matt's family for the first time. Matt and his sisters all teased their dad (the baker) that they were okay, but not perfect, and he would have to try again! Matt donates these cinnamon rolls to the school auctions - both the grade school and the high school. He is quickly earning quite the reputation around here. Wednesday night he made them for the high school teachers, so we got the "butts" as we call them. Hailey and Micah really enjoy when Matt makes cinnamon rolls for people. The recipe makes at least two dozen "not quite perfect" rolls and then a smaller pan of the ends or misfits or extras. (Or just two dozen rolls)
Cinnamon Rolls - recipe credited to Sylvia Heye (a family friend)
2 1/2 cups milk
1/4 cup water
1/2 cup sugar
2 tsp salt
4 1/2 tsp instant yeast (2 pkgs)
2 eggs
1/2 cup butter
7-7 1/2 cups flour
2 tbsp butter, soft
1/2 cup sugar
2 tsp cinnamon
In large bowl, combine yeast and 2 cups flour. Mix well. Heat milk and water until warm (scald); add butter, sugar, salt, and eggs; add to flour mixture. Beat 3 minutes on medium speed. Gradually stir in enough flour to make a soft dough. Knead in enough flour until dough feels satiny. Let rise until double, about one hour. Divide into two parts; roll into rectangle. Spread with 2 tbsp soft butter and combine the 1/2 cup sugar and 2 tsp of cinnamon. Sprinkle on top. Roll up like a jelly roll; cut into inch slices. Put in greased pans. Let rise until double. Bake at 350 degrees for 12-15 minutes or until brown.
Icing
2 lbs. powdered sugar
3/4 stick butter
2 tsp vanilla
1/4 cup corn syrup
1/4 cup hot water (enough to make it spreadable)
Put hot water, butter, syrup, and vanilla in a large bowl. Using a mixer (or whisk) slowly add powdered sugar and mix until spreadable.
Matt, my cinnamon roll was pretty good, but not quite perfect. You may have to try again.
