Favorite Foods Friday

I tried a new baked oatmeal recipe that I had seen on Pinterest. It was for individual baked oatmeal "muffins" that can be customized with a variety of toppings and add-ins. The kids seem to like them and Matt and I thought they were pretty good too. And best of all, they are pretty healthy and low calorie - each muffin coming it at 160 calories or less (depending on the topping).


Individual Baked Oatmeal Muffins - by Sugar-Free Mom
2 eggs
2 cups applesauce, unsweetened
5 cups of old fashioned rolled oats
1 banana, mashed
2 3/4 cup milk
1/2 cup of honey (can substitute other sweeteners)
1 Tbsp ground cinnamon
3 tsp baking powder
1 tsp vanilla extract
1 tsp salt

Optional toppings and mix ins - I used chocolate chips, blueberries, brown sugar, dried cherries and pecans for three different muffins. But it it flexible to whatever you like.
          1/4 cup chocolate chips
          1/4 cup dried cherries
          1/4 cup chopped pecans
          1 cup blueberries
          4 1/2 tsp brown sugar

Preheat oven to 350 degrees. Mix eggs, vanilla, applesauce, banana, and honey together in a bowl. Add in oats, salt, baking powder, and cinnamon and mix well with wet ingredients. Add the milk and combine, the batter will be runny.

Prepare your muffin tins with cooking spray or cupcake liners (you may wish to spray the cupcake liners as well.) Pour mixture evenly into muffin tins - go ahead and fill full - they don't really rise. Add toppings as desired, if you are using a mix-in add before filling the cups.

Bake 30 minutes until a toothpick comes out clean. Cool. These will freeze well for a quick breakfast - just heat and serve.

Unfortunately I under baked mine just a smidgen, mostly because my oven runs cool. I got 24 muffins and actually had a little batter left over. I made 7 with  dried cherry and pecan topping, 8 with chocolate chip topping, and 9 with blueberry mixed in and brown sugar topping. I just filled the other cups first, then added 1 cup of blueberries to the remaining batter for the blueberry ones.
