As promised today's recipe is the Brown Sugar and Balsamic Glazed Pork Loin. This is the second time I have made this recipe and it was still delicious. The kids even do a pretty good job of eating this so anytime I find a meat recipe that they like, I'm sold. I like to eat the leftovers as a tortilla wrap, and the leftovers don't last long.
Brown Sugar and Balsamic Glazed Pork Loin - from C+C Marriage Factory
1 (2 lb or so) boneless pork loin
1 tsp ground sage
1/2 tsp salt
1/4 tsp pepper
1 clove garlic, pressed
1/2 cup water
Glaze:
1/2 cup brown sugar
1 tbsp cornstarch
1/4 cup balsamic vinegar
1/2 cup water
2 tbsp soy sauce
Combine the sage, salt, pepper, and garlic. Rub over the roast. Place in slow cooker with 1/2 cup of water. Cook on low 6-8 hours. About 1 hour before roast is done, combine the glaze ingredients in a small sauce pan. Heat and stir until thickened. Brush roast with glaze 2-3 times during the last hour. Serve with remaining sauce on the side. You can try to slice, but mostly it is just going to shred.
