Favorite Foods Friday

For Mari's birthday party last weekend, I made my Party Macaroni. It has pretty much been a go-to party recipe for me because a) it's macaroni and cheese (yum!); b) everyone loves it (see a); and c) it makes a lot. Hailey has told me that she doesn't like the crackers on top, so I have now promised her to leave a half pan without crackers just for her and all the other cracker haters out there.

This is not a full pan, or even the original pan. I forgot to take a picture earlier, so this is a picture of the leftovers before they went into my fridge.

Three-Cheese Party Macaroni
36 oz. dried elbow macaroni
4 1/2 cups milk
3/4 cup butter, melted
1 1/2 tsp. ground white pepper
3/4 tsp. salt
24 oz. Velveeta cheese, cut into 1/2 inch cubes
24 oz. shredded sharp cheddar cheese
6 oz. shredded mozzarella cheese
2 sleeves of Ritz crackers (about 60 crackers), crushed

Preheat oven to 350 degrees. In a large pot, cook macaroni according to package directions, drain, and return to pot. Add milk, melted butter, pepper, and salt. Stir in cheeses. Transfer to two greased 9x13 pans. Bake uncovered for 15 minutes. Carefully stir the macaroni in each pan. Sprinkle with crushed crackers and bake about 5 more minutes. Let stand 10 minutes before serving.
