This edition of Favorite Foods Friday is a result of my latest obsession, Pinterest. I've mentioned it a few times but basically it is a visual and virtual pin board filled with collections of many kinds. I enjoy finding new recipes to try out. I decided to try this week's recipe to find a great giftable recipe perfect for taking a meal to someone. I succeeded. This Chicken Broccoli Supreme was well received by my family, will probably take a place in the regular rotation, and would make a great meal to give to someone.
Chicken Broccoli Supreme - from Get Off Your Butt and Bake
Base:
1 lb. fresh broccoli in smallish pieces
3 cups of cooked chicken, diced
Sauce:
1/3 cup butter, melted
1/4 cup cornstarch dissolved in 1/2 cup cold water
1/3 cup chicken broth
1/4 tsp salt
1/4 tsp pepper
2 cups milk
1 1/2 cups shredded cheddar cheese
Topping:
1 1/2 cups shredded cheddar cheese
2 tubes of Ritz crackers, crushed
1 stick butter, melted
Steam broccoli for 2 minutes, this starts the cooking process for the broccoli and gives it a great bright green color. In a greased 9x13 pan layer the chicken and broccoli, then set aside
In a sauce panover medium heat., combine melted butter, cornstarch and water, chicken broth, salt, pepper, and milk. Stir well and continue to stir until the sauce has thickened. Turn heat down to low and add the cheddar cheese, stirring until melted. Pour over the chicken and broccoli. Top with 1 1/2 cups of shredded cheddar cheese.
Combine the melted butter and crushed crackers then spread over the shredded cheese.
Bake 350 degrees for about 30 minutes.
We thought the cracker topping was really good, what's not to like, crackers and butter! If you are concerned, I think that you could probably reduce by half and maintain the flavor and idea. I enjoyed the fact that the broccoli did not get mushy and was just slightly crisp still. Yum, I'm still trying to talk myself out of making it again next week.
