Favorite Foods Friday

Since one of my plans for this blog includes turning it into some sort of keepsake journal for my children, I've decided to start Favorite Foods Friday to highlight some of our family's favorites. I doubt that I will post a recipe every week, but we shall see.

One of the most requested breakfasts we have had at our house is Breakfast Cake. It is a recipe I found on another blog I follow called Heavenly Homemakers.


Breakfast Cake (recipe from Heavenly Homemakers)

1 cup butter, melted and cooled
3/4 cup buttermilk
2 cups whole wheat flour
2 cups whole rolled oats
3/4 cup honey
2 eggs
1 tsp. sea salt
1 tsp. baking soda
1 tsp. vanilla
1 cup chocolate chips, raisins, or other dried fruit
my husband would also add walnuts, but I don't care for them

The night before...
Stir together butter, buttermilk, flour and oats in a glass bowl. Cover with a cloth and allow grains to soak on your counter overnight or for at least 8 hours.

The next morning...
Stir in honey, eggs, salt, baking soda, and vanilla. Fold in chocolate chips (or whatever you are using). Pour into a buttered 9x9 inch baking pan. Bake at 350 degrees for 30-40 minutes (my oven takes 38 minutes precisely) or until a toothpick inserted in the middle comes out clean.

My tip: In case you don't use buttermilk up fast enough...you can freeze it. I measure it out into 3/4 cup amounts and freeze in a container. Then I pull it out a day or so before I need it and put it into the refrigerator to thaw out. It needs a little shaking up, but it works great for me.

Before you ask, I don't know much about soaking grains - this is the only recipe that I have ever done it with. What I have read/heard is that soaking grains enables the body to digest and use more of the nutrients in the flour and oats. What I do know, is that we really enjoy this breakfast cake - yes, I use chocolate chips because I want my kids to eat it and they aren't big dried fruit fans. But, I also know that this cake makes a filling breakfast that my family enjoys.
