Favorite Foods Friday

Today's recipe is homemade flour tortillas. They are really cheap, taste great, and are easy to make at home. I usually make them when we have carnitas, but this week I made them to go with tacos. My family enjoys them a lot and I think they are worth the extra effort if you have time.


Flour Tortillas

1 cup warm water
1/4 tsp baking powder
1 tsp salt
1/4 cup oil
3 cups flour (all white, all whole white wheat, or divided white and wheat)

Combine the water, baking powder, salt, and oil in a medium bowl. Then add the flour. Stir until it is too difficult then dump out on a lightly floured surface and knead until you have a smooth dough. Shape into a ball, cover with a towel, and let rest for 10 minutes. Cut the dough into 10 pieces and shape into small balls. Cover and let rest for 10 minutes. Preheat a griddle or skillet on medium high heat. Roll out a ball of dough as thin as you can - approximately a 10 inch circle-like shape. Cook on griddle flipping once until done. You are looking for very light brown spots and the dough taking on a "cooked" versus raw appearance. Adjust your heat as needed to allow you to roll out the next ball while one (or two) are cooking.

Tip: I have a very nice (Pampered Chef) nonstick griddle that I use to do two at a time. I do not oil or butter the griddle at all - the tortillas should not stick.

I am in no way claiming these are authentic anything, but they work for us.
