Despite the cooler weather I haven't had the time or desire to spend much time in the kitchen this week. So your Favorite Foods post is a little different this week. I took a picture of dinner last night. We had grilled chicken leg quarters, fried new potatoes (from Matt's dad's garden), peas, and carrots. I'm not sure it can be considered a "family favorite" yet because Hailey pretty much only ate carrots and Micah only ate potatoes with the exception of their "try me" bites. <Sigh> Maybe someday they will eat their chicken in non-nugget form.
The chicken was really tender and flavorful and the skin was crispy and delicious. Matt only seasoned with season salt and the rest can be attributed to his masterful grilling skills. The potatoes were boiled until just tender then fried in a skillet with just a bit of oil until browned. I'm pretty sure just salt and pepper on those. We are kind of purists like that.
To be honest these are like the third time we've tried to grill the chicken leg quarters this summer and this is the first time they have been fully cooked through on the first attempt. The others unfortunately had to take a brief turn in the microwave to make them safe to eat. If they are still frozen at all they will not fully cook through on the grill - so that is my tip for this meal...make sure the chicken is completely thawed out and give yourself plenty of time to grill.
