Favorite Foods Friday

Autumn is one of my favorite times of the year. I enjoy the cooler temperatures and the comfort food. This week was full of both. This week I decided to share one of our favorite crock pot dishes...carnitas. Once again, it probably isn't authentic, but it is delicious, and it makes a lot for leftovers. I usually freeze most of the leftovers for another meal.


Carnitas - recipe from Good Cheap Eats

3-4 lb pork shoulder roast
salt & pepper
1 onion, chopped
1/2 tsp oregano
1/4 cup water

Place the pork roast in the crock pot. Season with salt and pepper, add the chopped onion, and sprinkle with oregano. Add water to the pot and cook on low for 8 hours or on high for 4 hours. Shred meat.

I serve on my homemade flour tortillas with traditional taco fixings, but you can use corn tortillas, guacamole, or your favorite toppings.

When we lived near Chicago, I could find the pork shoulder for $0.99/lb. However, I have been unable to find them that cheap where we live now, in fact some of the grocery stores rarely keep this cut of meat on their shelves. If you find that to be the case, you can use a picnic roast.
