Favorite Foods Friday

Today to tempt your taste buds I have Apple Pie Donuts. Yum! Although I must confess I couldn't convince either of my solid food eating children to try them. I have such adventurous children (that was a very sarcastic sentence). After our visit to the apple store orchard I wanted to try a new apple recipe and an apple donut sounded very yummy. Unfortunately I don't own a donut pan, but I do own a mini muffin pan so these were more like Apple Pin Mini-Muffin Donuts.


Apple Pie Mini-Muffin Donuts - recipe slightly adapted from Mom Advice
1 1/2 cups of all-purpose flour
1 3/4 tsp baking powder
1/4 cup lightly packed brown sugar
1/4 cup white sugar
1/2 tsp salt
1 tsp nutmeg
1/3 cup of cold butter, cut into small pieces
1 egg
1/4 cup milk
1 1/2 cups of apple - medium dice, approximately 2 apples

For sugar & cinnamon topping:
3/4 cup butter, melted
1 cup sugar
3 tsp cinnamon

Preheat your oven to 350. Whisk the flour, baking powder, sugars, salt, and nutmeg in a bowl. Add the cold chopped butter, and cut into the flour mixture until it resembles coarse crumbs.

In a separate bowl, beat the egg. Mix in the milk and fold in the chopped apples. Add the egg mixture to the flour mixture. Stir until just incorporated being sure not to over mix.

Fill mini-muffin cups and bake for 12 minutes or until the donuts are just golden. Allow to cool for 5 minutes. Remove from muffin tin and dunk in melted butter and roll in cinnamon sugar. Serve immediately.

Tips: These are best served warm or at least the day they were baked. They start to weep and get soggy when stored. I got about 3 dozen muffins from this recipe. I cut my apples more bite sized, but felt they were just a little too big; but you certainly don't want them tiny.
