In honor of Micah's birthday, I thought I would share his favorite cookie. Well, it is actually our family's favorite cookie. You see, Micah isn't really a desert guy. He doesn't like ice cream, cake, brownies, pie, etc. He really just likes cookies and candy - but even then he is still rather picky. When he was choosing his cake (details to come on Monday), he was very concerned because he kept saying he didn't really like cake. So I asked if he would like to have some cookies at his party too. This is really a delicious recipe.
Chocolate Chip Oatmeal Cookies - Taste of Home
1 cup butter, softened
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
1 tsp vanilla
3 cups quick-cooking oats
1 1/2 cups all-purpose flour
1 package (3.4 oz) instant vanilla pudding mix
1 tsp baking soda
1 tsp salt
2 cups (12 oz) semisweet chocolate chips
In a large bowl cream the butter and sugars until light and fluffy. Beat in the eggs and vanilla. Combine the oats, flour, pudding mix, baking soda, and salt in a separate bowl. Gradually add to the creamed mixture and mix well. Stir in chocolate chips.
Drop by rounded teaspoonfuls onto a baking sheet. Bake at 375 for 10-12 minutes or until lightly browned.
I use the Pampered Chef medium scoop and get approximately 4 dozen cookies. I also like to mix these up, bake off one tray, then scoop and freeze the rest for a quick freshly baked cookie anytime - or on Saturday at Micah's birthday party :)
