In keeping with the autumn season, I wanted to try a new recipe for pancakes. We had some apple cider on hand, so I decided to make Apple Cider Pancakes - a recipe I found through Pinterest.
These were seriously good pancakes, though I felt the apple flavor was more subtle than I was expecting. The recipe is a little fussy in that you are supposed to mix things in three separate bowls before combining, but it was certainly not difficult. Hailey and Micah both really liked them.

Pancake Mix - Recipe by Tokyo Terrace
3 cups whole wheat flour
3 cups white flour
1 1/2 tsps baking soda
3 tsps baking powder
1 Tbsp salt
Combine ingredients and place in an airtight container until ready to use. This should make 6 batches of pancakes.
Apple Cider Pancakes - Recipe by Tokyo Terrace
1 cup dry pancake mix
1 egg, separated
2 Tbsp olive oil
1/4 cup buttermilk
1/4 cup plain yogurt
1 tsp honey
1/2 cup apple cider (or apple juice)
Put the 1 cup of dry mix in a large bowl. Get out two smaller bowls. In the first bowl whisk egg yolk and olive oil. In the second bowl whisk the egg white, buttermilk, yogurt, honey, and cider. Combine the two bowls and whisk until combined. Pour the wet ingredients into the dry mix and stir until just combined.
Top with butter and syrup, or my favorite, butter and cinnamon sugar.
This recipe feeds 2 hungry people, or 4 not so hungry people. I doubled the recipe for my family and it was right on.
