Blueberry-licious

We are swimming in blueberries here!

And I can't think of anything more delicious than the 20 lbs. of Michigan blueberries that have taken up residence in our refrigerator.


I've been baking and even tried a little canning. I made a yummy blueberry upside down cake from a recipe I found on Pinterest. Pinterest is a virtual pinboard to collect any number of things, it saves your links so you can re-find that interesting recipe, craft, saying, etc. easily. At my husband's request, I baked a blueberry bundt cake that was really delicious.


I also decided to try canning some blueberry syrup. I have really only been a helper to Matt's mom when she cans and I have never done blueberries, so it was a little bit of a trip into uncharted territory. There were several moments when I was a little unsure if I was doing things correctly, but we got 2 pints of syrup plus a little more to sample soon.


Tomorrow I will be making two fresh blueberry pies for a staff party we are hosting. The rest of the blueberries are currently unclaimed, but I want to try the blueberry upside down cake again - the second time around should go a little more smoothly. I've been thinking about baking up some blueberry muffins for the freezer as well. The rest (if there are any) will probably be frozen for future baking.
