Favorite Foods Friday

Favorite Foods Friday is supposed to be about my kids favorites, however, today I am highlighting one of Matt's and my favorites...Fresh Blueberry Pie. I think someday the kids will eat it, but right now they tend to pass on this one and that is okay; more for us!



Fresh Blueberry Pie - from Midwest Living Magazine

1 1/2 cups all-purpose flour
2 tbsps sugar
1/2 tsp salt
1/2 cup vegetable oil
2 tbsps milk
1 cup sugar
3 tbsp lemon-flavored gelatin
2 tbsps cornstarch
1 cup water
4 cups fresh blueberries

For the pie crust: In a small bowl, combine flour, the 2 tbsps of sugar, and salt. In a small bowl, whisk together the oil and the milk; pour over the flour mixture. Mix with a fork until crumbly. Press evenly into the bottom and sides of a 9-inch pie plate. Bake at 400 degrees for 12-15 minutes, cool on a wire rack.

For the glaze: In a medium saucepan, combine 1 cup of sugar, gelatin, and cornstarch; stir in the water. Cook over medium heat stirring often until thickened and bubbly. Cook and stir 1 minute more. Remove from heat and let stand about 10 minutes to cool slightly.

Fill pie crust with blueberries. Slowly pour glaze evenly over the berries. Cover and chill the pie at least 2 hours or until set.

My tips: I use my Pampered Chef Salad and Berry Spinner to ensure that I have dry berries to put on the crust. Also one small box of gelatin will be enough for two pies.
