This was our second solo canning experience of the year and it went pretty well. Matt juiced 3 strawberry flats of tomatoes this morning using our kitchenaid juicer attachment. Then I spent a good portion of the day cooking the juice down into sauce. Once Matt got home, we filled the jars and processed them.
We chose to do an unseasoned, plain sauce to replace the cans of tomato sauce I buy from the store for making spaghetti. Maybe next time we will try a seasoned sauce. Our tomatoes have slowed a bit due to the fact that they didn't set on many tomatoes during the heat wave, they should be picking up again in a week or two. And I think once I get more comfortable with the canning process and don't have to think about it so much, it will be pretty easy to keep up. Ha, who am I kidding? It's never easy to keep up.
