Favorite Foods Friday

One of our family's favorite snacks is Cheerio Bars. They are similar to a peanut butter rice krispie treat and oh so yummy. This recipe came from a family that we knew when Matt was working at a church in Minnesota. That is where I learned what a "bar" was. I remember sitting at choir practice and our director asking for volunteers to bring "pans of bars" to an event. I had no idea what was considered a bar, so I asked and after being chuckled at, learned that a bar is any number of desserts that are made in a 9x13 or bar pan and cut into rectangles before serving. So brownies are bars, so are bar cookies, rice krispies, fruit and oatmeal concoctions, and the like.

Cheerio Bars
4 1/2 Tbsp butter
16 oz. of mini marshmallows
3/4 cup peanut butter
10 cups cheerios

In a glass bowl melt butter in the microwave, then add marshmallows and melt (30 seconds then stir and so on). After marshmallows have melted add peanut butter and stir until well mixed. Dump over a bowl with the Cheerios and stir until all Cheerios are coated. Press into a greased 9x13 pan. Cool, cut, and serve.

My tip: You can spray your Cheerio bowl and spoon with nonstick spray to prevent the marshmallow mixture from sticking to everything.
